1 large organic chicken breast
1/2-2/3 cup leftover mashed potatoes
Bread crumbs or almond flour if you are paleo
Preheat oven to 350 degrees. Blend chicken and mashed potatoes in food processor. Mixture should be smooth and not too wet so you can work into balls with your hands. Form 1 inch balls of mixture and roll in bread crumbs or almond flour. Place on metal cooling rack on baking sheet and spray with olive oil. Turn over and spray again. Bake at 350 for about 20 mins until center of nuggets reach at least 165 degrees. Serve with your favorite dipping sauce.
