One of my favorite side-dish vegetables is sweet potatoes. The kids love em, I love em. They have a lower glycemic index than white potatoes and are known to help regulate blood sugar instead of spike it. Even though they are called sweet potatoes, they are not related to potatoes. They are rich in beta carotene and anthocyanin antioxidants. Cooking with a bit of fat (sunflower oil) helps to absorb the beta carotene from sweet potatoes.
