Savory Meatloaf

Prep time: 20 min.      Cook time: 30 min

This is a great recipe to make and enjoy the leftover for the next few days.

1 lb grass fed ground beef

1 lb spicy ground pork (or unseasoned ground pork)

8 oz. liver sausage (packed with bioavailable vitamin A)

2 tbsp ketchup

1 8oz can tomato paste

1 tbsp garlic powder

1 tbsp onion powder

1 cup shredded carrot (squeeze out water)

1 cup shredded zucchini (squeeze out water)

2 tsp sea salt

1 tsp black pepper

2 eggs (substitute flax eggs if egg sensitive)

1/2 cup coconut flour

1/2 cup cooked quinoa

3 tbsp Worcestershire sauce

Preheat oven to 350 degrees. Combine all ingredients and divide into muffin tins and a thin layer on bottom of loaf pan. They cook faster than a loaf that could take an hour. Bake for about 20-30 mins until internal temperature reaches 175 degrees.
